Nariño is a region in Colombia that is quickly becoming a Tanager favorite. We are very excited to be sharing this coffee from Miguel Angel Dominguez. We have been enjoying this coffee as both a Single Origin Espresso and as a Pour-over. Look for incredibly sweet, Caramel Apple aromatics as your coffee is ground and brewed. We get complex yet very smooth dried stone-fruit characteristics, date, fig and caramelized sugars with maybe even a slight Caramel Apple hint. Don Miguel’s coffee is approachable and very interesting, perfect for every palate.
Don Miguel grows his coffee on approximately 2 hectares of land, which is equal to about 5 acres. He mainly grows Caturra variety of Arabica coffee on his farm along with Castillo, which is a robusta hybrid designed to combat diseases that affect coffee trees. The coffee is washed and then dry fermented for 16 hours. It is then dried on Parabolic raised beds. Parabolic beds are raised beds that are usually under a shelter or in an area similar to a green house. This is important for proper drying because of the varying micro-climates in Colombia that have high moisture levels year round, making it difficult for coffee to reach the desired internal moisture level in a proper amount of time.
